  • 1 Orange (sliced)
  • 1 bunch Spring Onions (chopped)
  • 2 Fresh Green Chillies (sliced)
  • 2 Fresh Red Chillies (sliced)

Instructions

Marinade:

  1. Wash the chicken well. In a separate bowl prepare salt, lemon juice, chilli powder, 1 tablespoon of garlic pickle and 1 tablespoon of olive oil.

  2. Mix well and apply thoroughly to the chicken before leaving it to marinate in the fridge for an hour.

Stuffing:

  1. For the stuffing, combine 2 chopped onions, 2 chopped tomatoes, 1/2 of a chopped green capsicum, chopped coriander leaves, 4-5 mint leaves, and 2 tablespoons of garlic pickle and mix it well in a bowl.

Method:

  1. Stuff the marinated whole chicken with the prepared stuffing. Place some stuffing on an oven tray before putting the chicken on the tray and covering it with more stuffing.

  2. Tie the chicken legs together with string. Add a tablespoon of olive oil on the chicken and sprinkle with black salt.

  3. Cover the oven tray with aluminium foil and place it in the pre-heated oven, at 250 degrees for an hour.

  4. After an hour, remove the tray and place the chicken back in the oven for 15 minutes until it becomes golden brown.

  5. For decoration, decorate the plate with lettuce, onions, sliced tomatoes, oranges, spring onions, greens and red chillis.

  6. Place the cooked chicken in the middle of the plate and serve with spring onions and boiled eggs.
