Almondigas - Filipino Meatball Soup

In the galley, every meal prepared is more than just a food to fill the stomach. It is a source of strength, comfort, and connection with home. For a better wellbeing onboard, one needs to have a meal which is wholesome, appealing and nourishing. Nourishment comes from the balance of nutrients; taste of the food comes from the hearty ingredients, cooking techniques and emotions. Among Filipino favourites, one dish that stands out for its warmth and nourishment is Almondigas, a simple yet hearty soup made with meatballs, misua, and patola.

Almondigas is nutritionally balanced with pork which provides protein for muscle strength, misua gives quick energy, and patola offers vitamins and fibre for digestion. A warm bowl of soup connects crew to home, easing stress and boosting morale. It also increases the fluid intake and helps seafarers stay hydrated, especially in hot, humid environments.

Ingredients you'll need

  • 2lb/ 900g of ground pork
  • 2 big patola (ridge gourd), sliced
  • 8 ounces/ 227 g of misua (wheat noodles)
  • 2 medium size onion minced
  • 12 cloves garlic crushed
  • 6 tablespoons fish sauce
  • 2 eggs
  • 2 beef cubes
  • 1/4 cup all-purpose flour
  • Salt as per taste
  • 1 teaspoon ground black pepper
  • 10 cups water
  • 6 tablespoons cooking oil

Instructions


  1. In a large mixing bowl, combine the ground pork, half of the onion, eggs, salt, ground black pepper, and flour. Mix thoroughly until all the ingredients are well incorporated. Set aside.

  2. Heat a cooking pot and pour-in oil.

  3. When the oil is hot enough, sauté the garlic and remaining onions.

  4. Add the beef cubes and fish sauce and cook for a minute.

  5. Pour-in water and let boil.

  6. Scoop about a tablespoon of the meat mixture and form it into a ball shape figure then drop in the boiling one after the other. Cook for 10 minutes.

  7. Add the patola (loofah) and cook for 2 to 3 minutes.

  8. Put-in the misua and cook for 1 to 2 minutes while gently stirring.

  9. Turn off heat and transfer to a serving bowl.

  10. Serve hot. Share and enjoy!
