Uttapam is a traditional South Indian dish that resembles a thick pancake or pizza, made from a fermented batter of rice and urad dal (black gram lentils). It is typically topped with a variety of vegetables such as onions, tomatoes, green chilies, and coriander leaves, which are pressed into the batter before cooking. The uttapam is cooked on a hot griddle until it is golden brown and crispy on the edges while remaining soft and fluffy on the inside. It is commonly served with coconut chutney and sambar (a lentil-based vegetable stew), making it a popular breakfast or snack option in South India.

Ingredients you'll need

For Batter:

  • 1 cup idli rice
  • 1/4 cup urad dal
  • 2 tbsp poha (optional)
  • 1/2 tsp methi seeds
  • Salt

For Toppings:

  • Chopped onion
  • Tomato
  • Green chili
  • Coriander
  • Carrot, capsicum (optional)

Instructions


  1. Soak rice, dal, methi, poha for 4–5 hours.

  2. Blend into smooth batter; add salt.

  3. Rest overnight (8–12 hrs) until bubbly.

  4. Heat pan, spread thick ladle of batter.

  5. Add veggies on top and press lightly.

  6. Cook both sides.

  7. Serve with coconut chutney or sambar.
