This apple banana cake recipe is crafted to be refined sugar-free, naturally sweetened with fruits and enhanced with the hint of vanilla flavour. Instead of butter, this recipe uses sunflower oil or olive oil which are rich in monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA), supporting the heart health.

Refined sugar free desserts may taste less sweet than the usual sugar containing dessert, but they offer significant health benefits when consumed mindfully. Developing a taste for health is a gradual process and it begins with the small and intentional steps. With health focused mindset, availability of basic food ingredients and a bit of creativity in the galley, even simple meals can become tools for better physical and mental well-being.

Ingredients you'll need

Dry Ingredients:

  • 3 1/2 cups Whole wheat flour
  • 2 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 tsp cinnamon powder
  • 1/4 tsp salt (enhances sweetness subtly)

Wet Ingredients:

  • 5 large ripe bananas (heavily speckled, mashed well)
  • 3 medium apples, stewed into a thick pulp or grated (~1½ cups)
  • 1/2 cup oil (sunflower/olive)
  • 1 1/2 cups milk (to adjust consistency)
  • 2 tsp vanilla essence

Add-ins (optional):

  • 1/2 cup chopped walnuts or almonds
  • 1/2 cup raisins or figs

Instructions


  1. Preheat oven to 180°C (350°F). Grease and line two medium loaf pans or one large tray (approx. 9x13 inch).

  2. In a large mixing bowl, mash bananas thoroughly. Add the stewed or grated apples, oil, milk, and vanilla. Mix until smooth.

  3. In a separate bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon.

  4. Gradually fold the dry mix into wet ingredients using a spatula. Add nuts or raisins if you’re using it.

  5. If the batter feels too thick, add more milk. The consistency should be thick, but spoonable.

  6. Pour the batter into the greased pans and tap gently to remove air bubbles.

  7. Bake for 35-40 minutes (loaf pans) or 30–35 minutes (tray), until a toothpick inserted comes out clean.

  8. Allow it to cool completely before slicing.
