A vibrant and hearty salad that captures the essence of the French Riviera, Salad Nicoise is a colorful medley of fresh vegetables, protein-packed tuna, and briny olives, all tossed in a zesty lemon-olive oil dressing.

Ingredients you'll need

  • 1 lettuce
  • 5 potatoes
  • 1 bunch of French beans
  • 3 tomatoes
  • 9 eggs
  • 1 tin of tuna
  • 1 tin of anchovies
  • 1 jar of olives
  • 2 lemons
  • 1/4 cup olive oil
  • 1 teaspoon mustard
  • Salt and pepper

Instructions


  1. Boil potatoes, eggs, and beans.

  2. Add the boiled ingredients to a platter, then add lettuce, tomatoes, tuna, olives, anchovies, onions and bell peppers.

  3. Whisk olive oil, lemon juice and mustard to make the dressing.

  4. Drizzle with dressing, season with salt and pepper, and serve fresh.
